Cucumber Sandwich

The other day I told you about a new great recipe site called The Tasty Kitchen. {Click here to read about it}

Well, the recipe I want to share this week is a recipe I got on the Tasty Kitchen website.

One of The Bugman's customers gave us a bag full of cucumbers. We love cucumbers. We usually eat them as a snack dunked in ranch dressing or I slice some for dinner and drench them in Light Italian Dressing. But lately I had been craving a good Cucumber Sandwich.

While I was loading my recipes to the Tasty Kitchen site, I was also busy making friends and reading their recipes. While browsing around I "ran into" Angie of the Arthur Clan! Angie is an amazing photographer AND one of the co-founders of iFaces! Now, Angie claims to be a "non-cook" but what do I find in HER RECIPE BOX? Cucumber Sandwiches!! YES! SCORE one for ME!

I changed up Angie's recipe just a bit to accommodate what I had on hand.....so here you go!


Cucumber Sandwiches

1 YUMMY cucumber- sliced

1 8oz tub of Cream Cheese (I used the 1/3 less fat variety - gotta save where you can, and this stuff taste like the real thing)

3/4 of a packet of Hidden Valley Ranch Dressing mix

1/4 tsp Dill Weed

Salt & Pepper to taste

slices of your favorite bread (I had honey wheat from the bakery)

Mix dry dressing packet and dill weed right into the cream cheese container. Mix until well blended.

Spread a thick layer of seasoned cream cheese onto one slice of bread. Top with several slices of cucumber.

Salt and Pepper to taste.

Place another slice of bread ontop and ENJOY!!

I love cucumbers, and I remember my Mother eating cucumber sandwiches when I was young. She never had ranch dressing to put on them then, but that sounds great.

OMWord. I love cucumber sandwiches. I have them once a year at the Mother's Day tea. I look forward to it all year. Yum. I will have to try this recipe. Sounds so good.

I believ my mother has made these before while I have never ate them she loves them I like cucumber but not big on bread

Oh my goodness - you are so sweet! :) Your recipe sounds even better than mine...I can't wait to try it out.

Isn't Tasty Kitchen just so much fun? I need to make one recipe from there a day and my hubby will be a very happy man indeed. Hee!

Angie's mom ( my sister Karen) and I used love eating cukes like this.... ( but our favorite was the tomato sandwich...fresh from the garden!)
As I have so many cukes this year..will try this recipie on a sandwich..it is like the one we call "slum gully" without the bread... cucumbers on rye are especially good! Have you seen her and and Drew's latest video yet? It is priceless ! It can be seen on her facebook or I (Heart) Faces...Actually I could show more..ha ha..as their aunt, I have real footage of them at that age! LOL
