Frozen Fruit & Yogurt Rollups

We are still crazy busy here, that's why I LOVE this yummy little treat we've been enjoying.

I first saw this "recipe" at I Blame My Mother,
and Sarah got the idea from Once a Month Mom, who calls them Fruity Breakfast Burrito's.

In the last month I have made 3-4 batches.....we love these THAT much!


Frozen fruit & yogurt rollups

Frozen Fruit & Yogurt Rollups
(from Once a Month Mom)

Ingredients:

10 flour tortillas
1-1/2 cups Vanilla yogurt
frozen berries
1/2 cup sugar
1 T. cinnamon
spray butter

Directions:

Mix cinnamon & sugar on a large plate. Spray one side of a flour tortilla with butter, covering the entire surface, then place butter side down on plate with cinnamon and sugar. Press down and move around, coating one side of tortilla in cinnamon and sugar.

Next, place tortilla, sugar side down on another plate. Spread about 1/8 cup of yogurt (I just eyeball this, I don't measure) in a strip a little left of the center. Add some frozen berries (I bought a bag of mixed, strawberries, black berries, raspberries and blue berries- I cut the strawberries up). Roll the tortilla tight and place on a large cookie sheet.

Continue the process with the rest of the tortillas.

Place the cookie sheet in the freezer for about 2 hours. Remove from freezer, cut each tortilla in half and place them in a large zip lock bag and put them back in the freezer for storage.

To Serve:
Take out of bag and eat immediately. You can let them thaw a little bit, but if you let them thaw too long, they're mushy, but can be eaten that way too.

Variations: you can try this with different flavors of yogurt and different fruits. Strawberries and bananas would be good.....just be sure to cut the strawberries up, a whole strawberry is hard to eat when frozen.

Puffcorn and Chocolate = L.O.V.E

This sweet yummy treat will have your sweetheart begging for more.

After Christmas a friend of mine introduced me to Puffcorn!
Have you tried it?
It's the perfect alternative to popcorn!
It has all the taste and flavor of popcorn without the nasty kernels,
so it's easier on your teeth and gums.

This same friend told me to try it with chocolate drizzled on it!........

This stuff is sinful people!!

It's an
irresistible treat

and SOOOO
simple!!


What you need for Chocolate Drizzled Puffcorn:

  • Puffcorn
  • melted white or milk chocolate candy melts
  • Cookie Sheet
  • Wax paper
  • small ziplock bag

  1. Buy a bag of Chester's Puffcorn, spread out on a wax paper lined cookie sheet.
  2. Place about 1 cup of melting wafers into a small ziplock bag (unsealed) and microwave for about 10 seconds to soften.
  3. Massage the wafers in the bags and microwave again for about 10 seconds. Repeat this until the candy is smooth (about 1 minute). Be very careful not to melt the ziplock bags. If you find this is happening, just melt the wafers in a small dish and transfer them to bags when they are melted. Press out excess air from the bags and seal them.
  4. Snip a small corner from the bag (about 1/16-inch).

Drizzle chocolate over Puffcorn
I did some in white chocolate, some in Milk Chocolate and some with both!
Let cool.
Enjoy!

EASY Fall Snack Mix!

I posted this "recipe" last year here. But since it's one of my FAVORITE snacks for this time of year (I made my first batch of the year over the weekend), I thought I'd repost it!

It's SOOOO easy and is great for a fall party, or just to keep around the house like we do!

*It does contain peanuts, so you have to be careful when serving this for parties*

Nuts 'N Corn

Mix equal amounts of Candy Corn and Salted Peanuts.

Shake in a ziplock bag, serve in a bowl.

Make LOTS, because it wont last long!!

Super Food for Game Day!


This Sunday is an unofficial American holiday, Super Bowl Sunday!
and what's a holiday with out some great food?....or make that SUPER food!

Here are a few of our game day favorites that always score a touchdown!


Mini Ham and Swiss Party Rolls

Sliced Ham (I use 1/2 pound per loaf)
Swiss Cheese (I use about 5 sliced per loaf)
1 pkg King's Hawaiian rolls
1/2 cup melted butter
1/2 tsp Worcestershire sauce
1/2 tsp dry mustard
1-2 tsp onion powder (or dried onion)
1 Tblsp poppy seed

The rolls will look like a large solid piece of bread. Leave the rolls intact and slice the loaf in half with a long knife to form a top layer and a bottom layer.
Place ham and cheese on bottom layer of rolls, then place top layer of rolls over ham and cheese and place in a 9x13 pan.
Mix remaining ingredients together and pour mixture over rolls.
Baker 350 for 15-20 minutes.

Let them cool slightly before cutting. They reheat well too, even in the microwave.

Spicy Tortilla Rollups

5 large flour tortillas
1 bunch green onions chopped - stems and all
4 ounces chopped green chilies- drained
8 ounces cream cheese - softened
8 ounces sour cream
1/2 pound cheddar cheese - shredded
Salt and pepper to taste
**NOTE- make the night before, they have to sit overnight

Have tortillas at room temperature. Place the remaining ingredients in a bowl and, with an electric mixer, combine all until well distributed. Spread mixture fairly thin and evenly on tortillas to within 1/8 inch of edge. Roll up jelly-roll fashion and wrap each tortilla in plastic wrap. Refrigerate overnight. When ready to serve, slice in 3/4 inch rounds and arrange on serving plate. Serve plain or with salsa.
*Note: tortillas will tend to dry out if rolls are unwrapped and sliced to early.
Makes about 60.

Ranch Oyster Crackers

2 bags of Oyster Crackers
1/2 cup oil
1/4 tsp garlic powder
1 tsp dill weed
1 pkg. dry Hidden Valley Ranch Dressing Mix

Heat oil, pour over crackers.
Mix dry ingredients and sprinkle over crackers and mix with wooden spoon.
Serve in a bowl. picture from allrecipes.

Mums and Pumpkins and Gourds....Oh MY!!

Yesterday I went to my FAVORITE nursery, Hillermann's Nursery in Washington, MO. I got Mums, Cornstalks, Pumpkins and other cool looking gourds to decorate the front of our house.

Take a look at why this is my favorite nursery!

They have MUMS in EVERY variety and color as far as the eye can see!

This family greets you as you enter the nursery!

Aren't these GORGEOUS!!! I LOVE the pink and yellow colors!!!

I didn't get any because they are early blooming mums, so they are close to being done, and I forgot to get the name- but aren't they pretty?

This gorgeous lady keeps an eye on everything! LOL

They have a great Hay Maze for the kiddo's to run thru.


Here's a sneak at what all I brought home.

The sun was still in my front yard, so the pictures aren't great.

Aren't the mums gorgeous? Since I'm a memeber of their Garden Rewards Club, I got these HUGE 10" pots BUY 3 get 1 FREE!- making them $6.75 ea!! That's cheaper than most other places AND these 10" Mums are HUGE!!

Look at these GREAT gourds I found!!

I can't wait to start working on it all today, The Bug Man got down my fall/Halloween bins for me last night.

I mixed up a batch of my favorite fall snack yesterday too!!
